Recipes: Breakfast Pizza

I like to call it pizza because my kids will think it’s fun, it is actually a ‘frittata’ and it is topped with your kid’s favorites making it look just like pizza.

You can even prepare it the evening before and serve it at room temperature.

Ingredients:

4 eggs, beaten
¼ to ½ cup of grated Cheddar Cheese or Monterey Jack Cheese
¼ cup diced ham, pepperoni, mushrooms, or other pizza toppings
1 tbsp butter or margarine

  1. Preheat your broiler.
  2. In medium-sized bowl mix eggs, cheese and pizza toppings.
  3. Melt the butter in a 8-inch frying pan with a metal handle over medium heat.
  4. Pour in the egg mixture and cook until the bottom in golden.
  5. Remove the pan from stove and place it under the broiler for about 3 minutes or until the top has puffed up and lightly browned.
  6. Cool slightly and cut into wedges. Enjoy!
